The Journey of Our Sparkling Wine: From Grapes to Glass

There’s something magical about opening a bottle of sparkling wine—the soft pop of the cork, the delicate stream of bubbles, and that first crisp, lively sip. At Suhru & Lieb Vineyards, our bubbly wines celebrate craftsmanship, patience, and precision. Each bottle tells a story of care, from vineyard to cellar to your glass.

We take sparkling seriously here. This year, we were proud to win the 2025 Dan’s Best of the Best Award for “Best Sparkling Wine.”

Harvest: The Foundation of Fine Bubbles

The journey begins in late summer, when we hand-harvest grapes destined for our sparkling wines. Unlike still wines, sparkling fruit is picked earlier—often about a week sooner—while sugar levels remain moderate and acidity stays bright. These early-picked grapes deliver the freshness and vibrancy that define our sparkling style.

We produce four méthode champenoise sparkling wines: Sparkling Pinot Blanc, Sparkling La Crescent, Sparkling Rosé, and Sparkling Reserve. Each varietal was chosen for its lively acidity and expressive fruit, creating a house style that is elegant, refreshing, and beautifully balanced.

The Méthode Champenoise: Traditional Craftsmanship

So, what makes the méthode champenoise so special? This centuries-old technique, perfected in France’s Champagne region, remains the gold standard for traditional sparkling wine production. After we create and blend the base wine, we bottle it with a small amount of sugar and yeast. This combination triggers a second fermentation inside the bottle.

As fermentation continues, carbon dioxide becomes trapped, forming the fine, persistent bubbles we love. The wine then rests on its lees (the spent yeast cells) for months or even years. During this time, it develops creamy texture and subtle notes of brioche, almond, and toast. Once the wine reaches its peak, we riddle and disgorge each bottle, ensuring every sip feels polished and expressive.

From Patience to Pop: Disgorging and Finishing

After aging, the bottles move through riddling—a process of gently turning and tilting them to gather yeast sediment near the neck. Next, we disgorge the bottle, removing that sediment and topping off the wine with a small dosage of wine and sugar. This final touch balances acidity and sweetness.

The result? Crisp, effervescent wines that are as lively as they are elegant. They’re perfect for toasting milestones, pairing with food, or simply elevating everyday moments. Each bottle reflects patience, skill, and the timeless beauty of traditional winemaking.

A Modern Twist: Sparkling Golden Muscat

While our méthode champenoise wines honor tradition, our Sparkling Golden Muscat adds a modern flair. Crafted using a gentle carbonation method, it’s infused with fine bubbles that highlight the grape’s natural aromatics. The result is a fruit-forward wine bursting with tropical fruit, honeysuckle, and citrus.

Its floral character and lighter effervescence make it ideal for brunch, light appetizers, or casual celebrations. Fun, refreshing, and aromatic—it’s a joyful addition to our sparkling lineup and proof that bubbles belong at any occasion.
